Adulting, again??
When does it end?
Sometimes, I cannot believe I’m supposed to be a grown-up. I miss when I didn’t have to book my own dentist appointments, know anything about tax returns, buy vegetables I forget to eat, or pretend to like coffee because it’s such a corporate conversation-starter. This might also be cold-weather blues, I’m not sure, but I do know adulting is so much work, and you’re just expected to be great at it.
If it’s not one thing, it’s two things. It’s like you become an adult solely so you can run errands for the rest of your life while trying to keep everything else on lock, exercise frequently, keep up with friends and family, and somehow remember to have hobbies that do not involve doomscrolling or chasing random people down the street.
One thing I do manage to have on lock, though, is finding new ways to make sure I’m eating my vegetables, and I’ve decided to be nice and share this recipe. Especially because it’s easy to put together even when your schedule is pretty busy.
