The holidays are officially over, and now it’s back-to-work season for most people. There are emails to catch up on, colleagues you (hopefully) look forward to seeing, and all the usual adult chaos that keeps the bills paid.
It’s important to have something you actually enjoy in between maximizing shareholder value and endless Teams calls that could most definitely have been an email or a quick message.
And so to have something to look forward to, whether it’s lunch or a work night dinner, I’m sharing my recipe for something a little fancy but easy to put together.
Ingredients
Orzo (obviously lmao)
200g Sun-dried tomatoes
4 smoked sausages
1 shallot/ small white onion
1 small chilli (I used a habanero cos I’m built different)
Garlic (don’t be a vampire)
Black truffle sauce (optional)
Fresh tomatoes
Olive oil (or any cooking oil tbh)
1 tsp ground white pepper
1 tsp dried basil
1 tsp dried thyme
Salt and seasoning cube(s)
Process
Cut the sausages and tomatoes and then finely chop the onions, garlic, and chilli (yes, it’s low effort bffr)
Fry the sausages and then sauté the onions and garlic in the oil
Add the tomatoes and seasoning, and cook for 4 minutes
Add the orzo and cook lightly for about 2 minutes until it’s all mixed
Add stock and a splash of cream, cook for another 3 minutes and then add the truffle sauce
Cook on low heat for 15 minutes, and you’re done
